I have not tried this recipe. I got this recipe from Living & Eating Well After Weight Loss Surgery Before & After. 1/2 cup is a portion.
Ingredients:
4 ounces jello sugar-free instant pudding mix, any flavor
2 cups skim milk, cold
1/2 teaspoon vanilla extract or 1/2 teaspoon coconut extract or 1/2 teaspoon almond extract
4 tablespoons protein powder (4 scoops)
3/4 cup sugar-free cool whip
Directions:
1. Pour the dry pudding mix into a medium bowl.
2. Whisk in the milk and vanilla.
3. Mix until smooth and thickened.
4. Whisk in the protein powder and fold in the whipped topping to lighten.
5. Chill the mixture.
