A healthy 'meal in a muffin', good for mornings.
Ingredients:
1 1/2 cups all-purpose flour (or spelt)
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 cup brown rice syrup
2 teaspoons cinnamon
1/2 teaspoon salt
3/4 cup wheat bran
1/4 cup oat bran
3 tablespoons ground flax seeds
1 cup soymilk
1/4 cup olive
1/4 cup applesauce
1 teaspoon vanilla
1 cup cooked quinoa
1/2 cup chopped almonds
1/2 cup fresh cranberries
1/2 cup hemp seeds
Directions:
1. Mix wet and dry ingredients seperately, then combine.
2. Bake in preheated oven at 400 degrees for about 20 minutes.
3. Cool before eatting.
