I absolutely love this recipe! It's great for a snack when I'm hiking or when I want something sweet and healthy. *Note* If you can't get certain dried fruits, you can also use a package of Ocean Spray dried fruit packages.
Ingredients:
4 oz soy protein powder, vanilla
2 1/4 oz oat bran
2 3/4 oz whole wheat flour
3/4 oz wheat germ
1/2 tsp kosher salt
3 oz raisins
3 oz dried cherries
3 oz dried blueberries
3 oz dried apricot
15 oz soft silken tofu
1/2 c apple juice
1/4 c honey
1/2 c light brown sugar
2 large eggs
2/3 c peanut butter
Directions:
1. Pre-heat oven to 350F degrees. Line rectangular pan with parchment paper.
2. Mix all dry ingredients except fruit together in one bowl.
3. In another bowl, mix all wet ingredients except fruit together.
4. Add fruit ingredients to wet ingredients bowl and mix very well.
5. Slowly add all of the wet stuff to the dry ingredients bowl and mix well.
6. Spread mixture over parchment lined pan and bake for 35-40 minutes or until toothpick comes out clean from center of pan.
7. When done, lift parchment out of pan and allow bars to cool before cutting. Be warned, there's a lot of calories in one bar, so if you're watching calories, cut into smaller bars.
8. Keep refrigerated for longer shelf life.
