This is a protein bar recipe from Alton Brown's show Good Eats.
Ingredients:
4 ounces powdered soy protein concentrate
2 1/4 ounces oat bran
2 3/4 ounces whole wheat flour
3/4 ounce wheat germ
1/2 teaspoon kosher salt
3 ounces raisins
2 1/2 ounces dried cherries
3 ounces dried blueberries
2 1/2 ounces dried apricots
12 1/3 ounces silken tofu
1/2 cup unfiltered apple juice
4 ounces dark brown sugar
2 large eggs, beaten
2/3 cup natural-style peanut butter
Directions:
1. Put some parchment paper (lightly coated with canola oil) in a 13 by 9 Pyrex dish and put aside. Heat the oven to 350 degrees.
2. In a big bowl, combine the soy protein powder, oat bran, wheat flour, wheat germ, and salt (essentially all the dry ingredients) and put aside.
3. Chop the dried fruit and set aside.
4. In another bowl, stir the tofu until very smooth, and add the apple juice, brown sugar, eggs, and peanut butter. Now add all this to the dry ingredients (soy protein powder mixture). Now fold in the fruit. Spread this out in the Pyrex dish. I usually have a lot more luck by covering the top of the batter with parchment as well and spreading it out like that. Bake for 35 minutes in a 350 degree oven, or until the internal temperature of the mixture reaches 205 degrees. Take them out of the oven and let cool completely. This will take about half an hour. Cut into twelve bars. This will keep several months in the freezer, but about a week outside of it.
