Pretty Pleasing Pumpkin Bread

I make this bread during the Thanksgiving-Christmas season. I like to see people's expressions when they bite into this bread, as they are usually surprised that it is moist and not mundane! The still-uncommon ingredient is the addition of cinnamon chips (they reside next to the chocolate chips in the baked goods aisle of your grocery store). Read more .I recently made this bread in mini-loaf paper bakeware pans purchased last year from Sur La Table on-line. When cooled, I wrapped them in saran wrap then in red cellophane, tied with a ribbon and tagged. They make great hostess gifts! Sorry my camera is pooping out on my 2008 pix!
Ingredients:
3 cups canned pumpkin puree
1 1/2 cups vegetable oil
4 cups white sugar
6 eggs
4 3/4 cups all-purpose flour
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 1/2 teaspoons salt
1 1/2 teaspoons ground cinnamon
1 1/2 teaspoons ground nutmeg
1 scant teaspoon ground cloves
2 teaspoons vanilla extract
1 (10 oz.) package hershey’s cinnamon chips
walnuts (optional)
glaze
juice of 1/2 fresh orange
powdered sugar, sifted
Directions:
1. Preheat oven to 350°.
2. Grease and flour three 9x5-inch loaf pans or (8) 7 1/2 x 3-inch loaf pans.
3. In a large bowl, mix together the pumpkin, oil, sugar, vanilla and eggs.
4. Combine the flour, baking powder, baking soda, salt, cinnamon, nutmeg and cloves.
5. Stir dry ingedients into the pumpkin mixture until well blended. Divide the batter evenly between the prepared pans.
6. Bake in preheated oven for 45 minutes to 1 hour.
7. The top of the loaf should spring back when lightly pressed.
8. Glaze:
9. Mix juice of 1/2 orange with powdered sugar until desired consistency.
10. Drizzle over warm loaves.
11. When baking in small individual loaves, reduce baking time to approx. 40 minutes.
12. *If using walnuts, roast them in a dry frying pan, or a 350° oven for approx. 3-5 min. to release the oils for a tastier nut.
