Pressure Cooker Stew

Ingredients:
2 pound(s) stew beef or chuck roast browned on both sides using 1tbsp. oil
1 cup(s) water or beef broth
0 1/2 cup(s) dry cooking sherry
2 whole(s) bay leaves
2 tablespoon(s) worchestershire sauce
3-4 cube(s) potatos cubed
5 cube(s) carrots cut into chunks
1 whole(s) spanish or yellow onion cut into chunks
1 package(s) mushrooms cut in half
salt and pepper to taste
Directions:
1. Brown the Stew beef or Chuck Roast in a Tbsp. of oil and remove to a plate.
2. Add the liquid ingredients and bay leaves before putting in the rack.
3. Add the rack, then meat and vegetables.
4. Cover the pressure cooker, add weight and heat on high until the weight begins to bounce. Reduce heat until weight barely moves and set timer for 30 minutes.
5. Transfer pressure cooker to the sink and run cold water over it until pressure normalizes and lid can be removed.
6. Remove contents to a bowl, remove rack and thicken gravy.
7. I prefer to use 2-3 Tbsp. of cornstarch suspended in 0.5 cup of cold water.
8. Pour the thickened gravy over stew and serve.
