One of my administrators cooked this for a meeting and I loved it. The beef was omitted for a completely vegan soup. However, I'm sure it would be delicious with the beef as well-or maybe turkey. She said the soup was given to her while she was pregnant. This is souper (he he) easy to make. It also makes a lot of soup, but it freezes well.
Ingredients:
1 lb ground beef
1 onion
3 potatoes
3 carrots
3 celery ribs
3 garlic cloves
1 cup cooked rice
14 1/2 ounces stewed tomatoes
14 1/2 ounces corn
14 1/2 ounces peas
14 1/2 ounces green beans
1 bay leaf
1/2 teaspoon thyme
1/2 teaspoon basil
3 teaspoons salt
1/2 teaspoon black pepper
8 cups water
Directions:
1. Brown ground beef and onion in frying pan.
2. Add all ingredients, including ground beef & onions, to a large pot.
3. Bring to a boil.
4. Reduce heat to medium.
5. Let cook until vegetables are cooked through.
