Servings: 2
Ingredients:
6 honey crisp apples
1/2 cup brown sugar
1 tablespoon ground cinnamon, divided
1/2 cup apple cider
1 teaspoon vanilla extract
3/4 cup sugar
1/2 cup beer
3/4 cup club soda
4 tablespoons melted butter
3 eggs
2 cups rice flour
1 1/2 cups cake flour
1 teaspoon baking soda
canola oil, for frying
salt
sliced aged (12 years) cheddar
Directions:
1. Peel, core and chop the apples.
2. In large saucepan over medium heat, add the apples, brown sugar, 1/2 teaspoon cinnamon, the cider and vanilla. Bring to simmer, then strain the apples over a mixing bowl to catch the liquid. To the liquid add the sugar, remaining cinnamon, 1/2 cup of beer, club soda and melted butter. Whisk in the eggs. Sift the flours and baking soda into a large bowl. Whisk in the liquid ingredients and let the batter rest for 30 minutes. Adjust thickness.
3. In a deep-fryer or heavy-bottomed pot, heat enough canola oil to come halfway up the sides of the pot, to 350 degrees F.
4. Stir the apples into the batter. Using and ice cream server, scoop the batter, in batches, into the fryer and cook until golden and fluffy. Remove the fritters from the fryer to a serving platter.
5. Make caramel sauce by heating 1 cup brown sugar and 1/4 cup white sugar in a small pan over medium heat. Bring the sauce to a boil, then add 1 cup of heavy cream. Lower the heat and cook until the sauce turns deep amber in color, about 10 minutes. Drizzle the caramel over the fritters, sprinkle with salt, and serve with slice of Cheddar.
