Try this main meal twist on a seventies classic.
Ingredients:
7 ounces cooked large shrimp
1 avocado, halved, peeled and sliced
7 ounces cherry tomatoes, halved
4 scallions, finely sliced
1 romaine lettuce, shredded
2 tablespoons olive oil
1/2 lemon, juice
3 tablespoons mayonnaise
2 tablespoons ketchup
1/2 lemon, juice
Directions:
1. Ready in 10 minutes Whisk the ingredients for the dressing together. If it's a little thick, add a splash of water.
2. Put the shrimp, avocado, tomatoes, scallions and lettuce in a large salad bowl, drizzle with the olive oil and lemon juice, toss gently, then serve with the dressing handed round separately.
