Practically Healthy Gingersnap Cookies

Trick your children with these ginger snaps! They use raw sugar and spelt flour... but your kids will never find out! These are wonderful and you can't even tell they are good for you!
Ingredients:
1 cup raw sugar
3/4 cup butter
1 egg
1/2 teaspoon salt
4 tablespoons molasses
1 teaspoon ginger
1 teaspoon cinnamon
1/2 teaspoon nutmeg
3 cups whole wheat flour
Directions:
1. Preheat oven to 350°F.
2. Mix all ingredients, soften the butter and add the flour last.
3. You may need to put the dough in the freezer if it is not firm enough, or you can just continue.
4. Roll into 1 balls and roll them in sugar.
5. Place on a greased cookie sheet and bake for 7-8 minute.
