The basic recipe came from bob's red mill, but i have substituted several things to boost it up even higher in nutrition. there is no oil or sugar and is such healthy loaded muffins and more than that, taste good. YOU CAN ADJUST THE NUTMEG AND CINNAMON IF YOU LIKE.
Ingredients:
1 cup whole wheat flour
1 cup wheat bran
1/2 cup wheat germ
1 teaspoon baking powder
1 teaspoon baking soda
1/2 cup honey
1/4 cup applesauce
3/4 cup milk
1 egg, lightly beaten
1/4 cup walnuts
1/4 cup raisins
1/2 teaspoon nutmeg
1 teaspoon cinnamon
Directions:
1. Mix all the dry ingredients together, then add wet ingredients, stir well and put in greased muffin pans.
2. SPRINKLE WITH CINNAMON AND BAKE AT 400 FOR FIFTEEN MINUTES.
