Powdered Sugar Cut Out Cookies

This has been my favorite cut out cookie since my mom first gave it to me in the early 90’s, and Maggie and I got to make and decorate a batch while she was here over Valentine's Day - Maggie actually did all the decorating after I frosted the cookies for her. Read more ...she did a GREAT job! I like to roll them as thin as possible so the result is a crispy cookie throughout. I have found that it’s easiest to do this by freezing the cut outs for a few minutes before removing them from the dough – I’ve explained my process in the directions below. The result is a crispy thin cookie that will melt in your mouth.
Ingredients:
1 cup butter, softened
11/2 cups powdered sugar
1/4 teaspoon butter flavoring
1/4 teaspoon almond extract
1 teaspoon vanilla extract
1 egg
21/2 cups flour
1 teaspoon baking soda
1 teaspoon cream of tartar
1/2 teaspoon salt
Directions:
1. In a large bowl, cream together butter, powdered sugar, flavoring and extracts.
2. Beat in the egg.
3. Add dry ingredients and blend all together well.
4. Cover and refrigerate for at least an hour.
5. Working with about 1/5 of the dough, roll out dough to ⅛” to 1/4” thickness on powdered sugar dusted waxed paper (cut waxed paper to fit on a baking sheet that will fit in your freezer); cut out desired shapes.
6. Slide waxed paper onto baking sheet and place in freezer for about 10 minutes; remove pan from freezer and pull scraps of dough away from cut out shapes.
7. Place cut outs on lightly greased baking sheet.
8. Bake at 375 degrees for about 8 minutes, until edges of cookies are just barely beginning to turn a golden brown…the thinner the cookie, the quicker it will bake, so watch carefully.
9. Repeat this for all of the dough, saving the scraps from each batch until the end, then joining them all together and rolling it out for one last batch.
