Good for morning or midnight treat. These are not overly sweet,but satisfying.
Ingredients:
2 eggs
2 egg yolks
4 tablespoons whole wheat flour
2 tablespoons honey
1/4 teaspoons cinnamon
2 ripe fresh peaches,peeled and chopped coarsely
3 egg whites
butter and cinnamon
Directions:
1. Beat together 2 whole eggs and egg yolks.
2. Stir in flour,honey,cinnamon and peaches.
3. Beat egg whites until stiff and fold into the batter.
4. Melt butter in a medium hot skillet and drop batter by tablespoonfuls .
5. Cook to a golden brown on both sides.
6. Serve warm with butter and cinnamon.
7. Nice for a brunch,with a poultry dish as will.
