Great Summer Cake
Ingredients:
nonstick spray
3 cups flour
1/2 t salt
1 1/2 cups unsalted butter, room temp
3 cups sugar
5 large eggs
1 1/2 t lemon zest - divided use
1 1/2 t lime zest - divided use
3/4 cups plus 2 t lemon lime soda - divided use
1 1/4 cups powdered sugar
Directions:
1. Preheat oven 325 Baking Time approx 1 hour 15 minutes
2. Spray 12 cup bundt pan with non stick spray
3. Whisk flour & salt in bowl to blend
4. Beat butter in large bowl of electric mixer until fluffy
5. Gradually beat in sugar
6. Beat in eggs one at a time
7. beat in 1 t lemon zest and 1 t lime zest
8. Beat in flour mixture about 3/4 cup at a time alternating with 3/4 cup lemon lime soda
9. Beat about 1 minute more
10. Transfer batter to prepared bundt pan
11. Bake in preheated oven until golden and tests clean, about 1 hour 15 mins
12. Cool cake in pan 5 minutes
13. FROSTING (This cake is so good you don't even need to frost it)
14. Carefully turn cake onto wire rack and cool completely
15. Combine powedered sugar and remaining 1/2 t lemon & lime peel
16. Whisk in approx 2 T soda to make a thick smooth icing.
17. Drizzle icing over cake
