Pound Cake From A Plantation |

A deliciously lemon flavored oldfashioned pound cake. If you want to use orange or lime as the main flavor, that is not a problem. Ingredients:
1-3/4 cups all-purpose flour |
1-1/2 teaspoons grated lemon peel |
3/4 teaspoon baking soda |
1/2 teaspoon salt, optional |
1/2 cup butter, softened |
1 cup sugar |
4 eggs |
1/2 cup sour cream, either regular or reduced-fat |
1-1/2 teaspoons lemon juice |
1 cup ground nuts |
lemon icing or confectioners’ sugar |
Directions:
1. Stir together flour, lemon peel, baking soda and salt. 2. Set aside. 3. In a large mixing bowl, beat together butter and sugar at medium speed until light and fluffy. 4. Beat in eggs(one at a time), sour cream and lemon juice until thoroughly blended. 5. On low speed, beat in flour mixture, 1/2 cup at a time, just until blended. 6. Pour half of the mixture into a greased and floured 9 x 5 x 3 inch loaf pan. 7. Sprinkle with nuts. 8. Top with remaining batter. 9. With narrow spatula or knife, gently swirl through batter to marble. 10. Bake in preheated 325° F oven until cake tester inserted in the center comes out clean, approximately 60 to 70 minutes. 11. Cool on a wire rack for 10 minutes. 12. Remove from baking dish and cool completely. 13. Frost with your favorite icing recipe or dust with confectioners’ sugar. 14. 1 loaf serves 6 - 8 |
