Potatoes With Feta Cheese Tomato and Cilantro

This dish has a fresh taste to it. I love it for breakfast!
Ingredients:
3 -4 tablespoons olive oil
6 -8 large russet potatoes
1 -2 garlic clove
2 medium firm tomatoes
8 ounces feta cheese
1/2 bunch cilantro
Directions:
1. Chop potatoes with the peel on and fry in a skillet over med. high heat.
2. Add chopped garlic.
3. When the potatoes are done to your preference, add chopped tomatoes, cilantro, and cheese.
4. I love this one with for breakfast with eggs.
