Potato -zucchini- Parmesan -latkes

Traditionally these are eaten during channnukah, the festival of lights, but you can have them anytime .yum............................... courtesy jewish cooking
Ingredients:
6 -potatoes, grated
2 pounds zucchini , grated
1/2 -tablespoon lemon juice
1 - large onion chopped
2 - cloves garlic
1- egg
1 - ounce all-purpose flour
1/2- cup parmesan cheese grated
half bunch parsley , chopped
2- teaspoons sugar
salt and pepper to taste
olive oil for frying
Directions:
1. Combine the potatoes and onions
2. add the remaining ingredients and mix well into a batter......
3. heat oil in a frying pan, and when very hot , drop in about 2 -dessertpoons of batter for each latke...............
4. fry the latkes on each side until they are crisp and brown.........
5. sprinkle them with sugar..
6. there are other variations on latkes you can use other veggies too......use your imagination .......................
7. serves 4
