Potato Soup With Smoked Sausage

A tastey, rich potato soup with bountiful flavors of corn and smoked sausage with a little kick from the cayenne pepper. With a nice green salad and some popovers makes for a great supper on a wintery day.
Ingredients:
1 lb smoked sausage, chopped
2 tablespoons butter
3 potatoes, peeled and diced
2 stalks celery, chopped
3 carrots, chopped
1/2 cup diced onion
14 ounces corn with juice
1 cup water
14 ounces evaporated milk
1 tablespoon fresh dill or 1 teaspoon dried dill
1/2 teaspoon cayenne pepper
1 teaspoon salt
1/2 teaspoon black pepper
Directions:
1. In a large saucepan, melt the butter over low heat being careful not to burn it.
2. Add potatoes, celery, carrots and onions and saute until softened.
3. Add smoked sausage, corn with juice and water and simmer, covered approximately 30 minutes or until vegetables are tender.
4. Add evaporated milk, dill, cayenne pepper and salt and pepper and continue to simmer for about 5 minutes.
