Potato Soup With Bacon

A nice, warm, comforting soup with the smoky flavor of bacon. My husband really liked it which says a lot since he is not much of a soup man. You can make it chunky or puree it and make it smooth. Either way, it tastes really good.
Ingredients:
2 tablespoons olive oil
1/2 lb bacon, diced
1 small onion, diced
2 tablespoons flour
15 ounces chicken broth
3/4 cup water
1/2 teaspoon dried thyme
1 pinch garlic powder
1 pinch onion powder
1/2 teaspoon salt (or more)
1 cup milk
4 cups potatoes, diced
Directions:
1. Heat olive oil in bottom of soup pot; add bacon, cook until bacon is almost crisp but still limp.
2. Add onion and cook a few minutes more.
3. Remove bacon and onion with slotted spoon and set aside.
4. Add flour and stir until blended; slowly add the broth, stirring all the while. Add water and bring to boil whisking or stirring until smooth and thickened.
5. Add thyme, garlic powder, onion powder and salt. Taste. Add more seasoning according to your preference if needed.
6. Add milk, stir and reduce heat to simmer.
7. Add potatoes and bacon.
8. Cover and continue to simmer until potatoes are tender, about 20 minutes. Taste and add more salt if needed.
9. Serve.
