Potato Soup on a Whim

One night, I decided I really wanted potato soup. I didn't have the complete ingredient list for any one recipe, so I threw one together out of what I had in my refrigerator and pantry. It's easy, takes only one pot, and you probably have everything in the house! Experiment with more or less of any ingredients ... or add your own.
Ingredients:
4 -6 medium potatoes, peeled and cubed
1/4 cup celery, chopped
1 carrot, chopped
1 onion, chopped
1 (10 1/2 ounce) can cream of chicken soup
2 (14 ounce) cans chicken broth
salt and pepper
nutmeg
Directions:
1. Combine the chopped potatoes, celery, carrot, and onion into a large pot.
2. Add the cream of chicken soup, and enough chicken broth to cover all the vegetables (about 2 cans).
3. Add salt and pepper to taste, and sprinkle lightly with nutmeg.
4. Bring pot to a boil.
5. Turn the flame down and let simmer for 20 minutes or until potatoes are tender. Stir occasionally.
6. Turn off the flame and remove the pot to a cool burner (or counter) and mash the potatoes in the pot (be careful and the pot will be hot).
7. Serve and enjoy.
