A creamy soup that is low in fat. 8 1/2 cup servings
Ingredients:
2 cups potatoes
2 cups vegetable broth
1/2 cup onion
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup sour cream, low fat
Directions:
1. Peel and dice the potatoes & chop the onion
2. Cook the potatoes and onion in the broth and season to taste.
3. Puree half the soup and return it to the pot
4. Just before serving, stir in the sour cream
5. Garnish with fresh chives or parsley
