I always loved my mom's potato soup, but I can't leave good enough alone, so I added a few ingredients to satisfy me and it turned out delicious!!!
Ingredients:
5 lbs potatoes
1 teaspoon sea salt
1 teaspoon black pepper
1 teaspoon celery seed
1 teaspoon crushed rosemary
1 garlic clove, minced
1 small onion, minced
about 2 cups milk
2 tablespoons cornstarch
2 tablespoons butter
Directions:
1. Peel and dice potatoes into bite sizes. In a large pot put the potatoes in and then fill with enough water to just cover the potatoes. Set aside.
2. In a skillet, saute the garlic and onion for 3-5 minutes to soften.
3. Add the garlic and onion to the potatoes. Then add the salt, pepper, celery seed, and rosemary.
4. Boil potatoes over high heat until potatoes are fork-tender.
5. In a mixing bowl combine the milk with the cornstarch until the cornstarch dissolves.
6. Once the potatoes are soft, lower the heat to medium and add the milk mixture and the butter. If it needs a little more milk, add some. You want it to be a creamy, milky color- not watery. Stir well until it thickens and then serve!
