These are super good, Next time I think I'll try them with cheese. This recipe comes from The Australian Women's Weekly Party Food.
Ingredients:
5 medium potatoes, unpeeled
2 tablespoons olive oil
1/2 cup sour cream
Directions:
1. Preheat oven to hot.
2. Scrub potatoes well; brush with half of the oil. Place potatoes on oven tray; bake, uncovered, in hot oven about 50 minutes or until tender. Cool.
3. Cut each potato into six wedges; carefully remove flesh, leaving skins intact. Place potato skins, skin-side down, on wire rack over oven tray; brush with remaining oil. Roast, uncovered, in hot oven about 20 minutes or until crisp; serve with sour cream.
