This is an easy way to make a side dish for dinner that turns into home fries for the morning.
Ingredients:
5-6 red potatoes
1 tbsp butter
1 tbsp olive or vegetable oil
1 tsp paprika
1 clove garlic, minced
1/2 vidalia or other sweet onion, chopped
1 1/2 tsp adobo seasoning, sin pimiento (without pepper)
1 tsp onion powder
salt and fresh ground pepper to taste
Directions:
1. Mix all ingredient in a bag or right in the baking pan
2. bake at 350 for 1 hour or until fork insert easily into potatoes, but does not break apart
3. enjoy for dinner as a side dish
4. -refrigerate overnight-
5. add to pan over medium heat with a bit of oil or butter
6. fry until hot and browned
7. enjoy as home fries with breakfast
