Potato Scallion Biscuits

These are fantastic. Potatoes, butter, herbs all in one little biscuit. Yummy.
Ingredients:
3 medium russet potatoes
2 cups butter melted
2 cups all purpose flour
3 tablespoons baking powder
1/2 tablespoon baking soda
3/4 teaspoon salt
1 teaspoon freshly-ground black pepper
2/3 cup buttermilk
4 scallions sliced thinly
Directions:
1. Preheat oven to 375.
2. Grease a cookie sheet.
3. Scrub potatoes clean and place on the prepared cookie sheet.
4. Bake in the skins about 45 minutes then peel and mash with butter while still warm.
5. Turn oven up to 400.
6. Sift together dry ingredients and mix into the potatoes.
7. Add buttermilk and scallions and combine but do not over mix.
8. The dough will be quite sticky.
9. Pat the dough down to 1/2 inch on a floured board and cut out with a floured biscuit cutter.
10. Place 1 inch apart on the cookie sheet.
11. Alternately you may drop dough by the tablespoonful onto the cookie sheet.
12. Bake for 20 minutes until well browned.
