For extra zing make the peppers jalapenos. Add a finely chopped anchovy but cut back a little on the salt. Use bib lettuce...there are a lots of additions you can make. Nice variation to the usual salad in a bowl.
Ingredients:
3 cups cold mashed potatoes
1/3 cup mayonnaise
2 tsp onion, chopped
2 tsp milk
1/2 tsp salt
1/2 tsp paprika
3 tbsp fresh parsley, chopped
- lettuce leaves
6 hardcooked eggs, chopped
1/4 cup sweet green pepper, finely chopped
1/4 pimientos, finely chopped
2 tbsp mayonnaise
1/4 tsp salt
- pinch of pepper
Directions:
1. In bowl; stir together eggs, green pepper, pimientos, mayonnaise, salt and pepper. Set aside.
2. In separate bowl; stir together potatoes, mayonnaise, onion, milk, salt and paprika. Evenly spread on large sheet of waxed paper into 12 x 8 inch rectangle.
3. Spread filling over top. Roll up, jelly-roll style, using waxed paper to aid rolling. Sprinkle with parsley and a little paprika. Cover and refrigerate for at least 2 hours or until chilled. Slice and serve on lettuce leaves.
