Potato Salad for Two

This is a quick and easy potato salad to make when you are in a hurry, or have limited ingredients.
Ingredients:
3 medium potatoes, scrubbed clean
1/2 cup fat-free mayonnaise
2 teaspoons chives, chopped
2 teaspoons fresh parsley, chopped
1 tablespoon extra virgin olive oil
1 tablespoon lemon juice
Directions:
1. Boil potatoes until tender. Drain and cool.
2. Roughly chop potatoes into chunks.
3. Place potatoes in a bowl with all other ingredients, and stir gently until well combined.
4. Season with salt and pepper if desired.
