This is a 40 person recipe so it takes a little longer to prepare than some. We have made this recipe by either whipping (fluffing) the potatoes or by hand peeling and breaking them. The choice is yours and this is good if you like your potato salad served either hot or cold.
Ingredients:
10 lbs. potatoes boiled and peeled
1 bunch of celery hand chopped and diced into 1/4 pieces
1 medium 1015 onion chopped and diced the same
1 c dill relish
1 c sweet relish
1 4 oz. diced pimentos
3 c mayonnaise
3 t mustard
1 t salt
1 t black pepper
1 t paprika
Directions:
1. Wash and boil the potatoes and prepare your onion, when the potatoes get fork tender peel and place in your mixing bowl either chopped or whipped. Add your chopped onion and blend in with the hot potatoes. Let it rest for 10 to 15 minutes then add the rest of the ingredients with the dry seasonings going in last. Mix well with gloved hands and serve or refrigerate.
