Potato salad my way :-)
Ingredients:
5 small-medium red potatoes, cleaned w/skin on
1/2 cup green onions, green & white parts sliced thin
1 cup celery, diced
2 eggs hard boiled, diced
4 slices bacon, cooked & sliced or crumbled
1/2 cup dill (fresh), chopped
2 tbsp mayo
1 tbsp dijon mustard
black pepper, cayenne pepper, and paprika to taste
**add red bell pepper for color & flavor - i can't eat them, but if you can they're a great addition to this recipe
Directions:
1. Place potatoes in a large pot and fill with water, just covering potatoes. Add some salt to the water and cook on high until water is boiling - check on potatoes and if they aren't soft enough continue to cook for several more minutes. Once potatoes are soft enough to be pierced with fork, remove from water and set aside to cool. Once cooled, cut into cubes and place in a mixing bowl. Add remaining ingredients and mix well. Season to taste.
