An evolution from years of family picnics. A smooth, crunchy, spicy, taste experience. Uses a mixture of red and russet potatoes. NO mustard. Modified 7/2/09
Ingredients:
6 large eggs
5 medium red potatoes
5 medium russet potatoes
1/2 cup sweet pickle relish
12 sweet gherkins sliced
6 spring onions (approx. 1/2 cup)
6 radishes (approx. 1/2 cup)
1 cup miracle whip
1 tsp seasoning salt
dash black pepper
Directions:
1. Peel potatoes and cut into 2 inch cubes bring to boil in 6 quart pot boil until tender
2. Put eggs in cold water in a 4 quart pot, bring to boil and boil for 10 minutes
3. Drain and cool potatoes
4. Peal and cool eggs
5. While potatoes and eggs are cooling, slice radishes and quarter them
6. Slice spring onions using up to 4 inches of green stems
7. slice eggs lengthwise and sideways
8. Combine all ingredients in a large bowl, stir until toughly mixed
