I made this up over the years, using various tips and techniques that people have given - all around the world - Australia, Germany and the US. Most people seem to like it, but this is one of those dishes where everyone makes it the best . So let me just say, I like it and generally won't eat any other. Mmmm! Isn't that what I said in a previous sentence?
Ingredients:
1 lb potato
1 egg
1 small onion, chopped
2 tablespoons sweet relish
1/4 cup vinegar
1/2 cup skim milk
8 ounces low-fat mayonnaise
2 tablespoons mustard
1/4 teaspoon pepper
1/4 teaspoon salt
1/8 teaspoon cayenne pepper or 1/8 teaspoon paprika
Directions:
1. Peel, boil and cube potatoes.
2. Hard boil egg, slice.
3. In a covered bowl place potatoes, egg and onions.
4. To sour the milk, combine vinegar and milk.
5. Pour over potatoes mixture.
6. Add sweet relish and mustard.
7. Add mayonnaise as needed, and pepper and salt to taste.
8. Mix thoroughly. If too soupy, add more mayonnaise.
9. Sprinkle with cayenne pepper or paprika if desired.
