Potato Pancakes With Italian Herbs

One of my few Comfort Food recipes. These are intended to be quite thick, almost more of a knish. Crispy on the outside and when you bite in... delicious. Italian herbs, bacon and just a hint of (don't kill me) ranch dressing.
Ingredients:
cooking spray
4 cups prepared genuine mashed potatoes
1/2 cup potato flakes (instant)
2 tbs butter
1/3 c sour cream
1 t ranch dressing
2 t fresh basil, chopped fine
3 t fresh oregano, also chopped fine (if you only have dried, 4 t)
3 t fresh garlic
2 t black pepper
1 t plus 1 t onion powder (or same amount pulverized fresh)
1/4 cup bacon, drained and diced. (some variants have omitted this and instead top the finished pancake with prosciutto ham)
Directions:
1. Combine real mashed potatoes and flakes. This will result in a somewhat dry base necessary for the rest of the recipe to hold up.
2. Combine butter and sour cream with potatoes.
3. Add garlic and pepper. Mix thoroughly.
4. Add ranch, Mix thoroughly.
5. The remaining ingredients should be added to the base directly before frying. Heat your skillet please.
6. Combine remaining herbs and bacon. Form mixture into individual patties at least 1 thick.
7. Fry until golden brown.
8. *optional* Top with prosciutto
9. Serve.
