Ingredients:

  • 4 large potatoes
  • 2 eggs
  • 1 tsp salt
  • to taste pancake mix

Directions:

  1. Peel potatoes.
  2. Grate potatoes into a bowl of cold water to prevent darkening.
  3. Drain thoroughly but not dry.
  4. Add beaten eggs and salt. Stir.
  5. Add enough pancake mix to blend well and drop onto greased griddle.
