Potato Pancakes

If you have a couple of potatoes, you have breakfast! My Saturday morning favourite.
Ingredients:
4 medium potatoes
2 tablespoons canola oil
Directions:
1. Grate potatoes (with skins) using a cheese grater onto paper towels.
2. Pat out as much moisture as possible.
3. Fry thin 5 inch diameter clumps of shredded potatoes in a non-stick frying pan, on medium heat for about 5 minutes on each side.
4. Enjoy!
