Easy and delicious potato-leek soup.Great use for leftover mashed potatoes. From Everyday Food
Ingredients:
1 tsp butter
1 c leeks,chopped(white and lt. green parts only)
3-1/2 c low-sodium chicken or vegetable broth
1/2 c water
3 sprigs thyme
2 c mashed potatoes
Directions:
1. In large saucepan,melt butter over med-high heat. Add leeks and cook stirring until softened,about 3 mins. Add chicken or vegetable broth,water and thyme. Bring to boil. Reduce to simmer and whisk in mashed potatoes. Simmer till warmed through.
