A warm soup for a cold day
Ingredients:
230 grams leeks, chopped and rinsed well
1 tablespoon butter
425 grams red potatoes, peeled and chopped
1 teaspoon salt
1 teaspoon pepper
2 cups chicken broth
1/2 cup water
Directions:
1. Saute leeks in butter until wilted. Add the broth, water, potatoes, salt and pepper. Simmer until the potatoes are soft, about 1/2 hour. Remove 1 cup soup to a blender and puree, return to pot and stir in. Serve hot.
