Low-fat, quick & easy potato leek soup
Ingredients:
3 cups potatoes, chopped
1 cup leeks, sliced
1/2 cup onion, diced
3 cloves garlic, diced
6 cups vegetable broth
2 tbsp salt
2 tbsp black pepper, cracked
2 tsp oregano
2 tsp thyme
1 cup fat-free yogurt
2 tbsp olive oil
1/2 cup celery, chopped
2 tbsp chives
Directions:
1. In soup pan, heat olive oil. Saute leeks, onion, garlic, and celery until soft.
2. Add potatoes, salt and pepper, and vegetable broth. Bring to a boil.
3. Reduce heat to medium and add spices.
4. Continue to cook for 30-45 minutes, or until reduced to desired thickness.
5. Turn off heat and allow soup to cool a bit.
6. Add in yogurt and stir until creamy. Serve immediately. Garnish with chives.
