Potato Latkes

This recipe is typically served at Chanukah, the Jewish Festival of Lights. Oil was burned in the original Menorahs and that fact plays a symbolic role in many fried foods.
Ingredients:
4 large potatoes, grated and either pressed between layers of paper towel or place in a sieve and press any liquid out.
*for a change, i like to use 3 large potatoes and 1 yam/sweet potato
1 medium onion, finely grated on a box grater or a rasp, which takes forever
1 egg, beaten
note: you can add 1 whole beaten egg or for lighter latkes, you can beat 2 egg whites until there are peaks and fold them into the mixture.
1/3 cup all-purpose flour
1/2 tsp. garlic powder or 1/2 tsp. onion powder
1/2 tsp. salt (optional)
vegetable oil for frying
note: if you want something a little different then grate half a medium zucchini or add a minced garlic clove and i sometimes like to add a pinch of cumin.
Directions:
1. Peel and coarsely grate the potatoes.
2. I like to drain my grated potatoes.
3. Mix potatoes and onion with the beaten egg. flour, garlic powder and salt.
4. Drop teaspoon size pancakes into HOT vegetable oil.
5. Brown on both sides.
6. Serve with sour cream and applesauce.
7. Makes approximately 20-25 small latkes.
