Dumplings served as a side with roast duck, goose or pork. I think they are very heavy, but Tom likes them like this. I welcome any suggestions to liten it up!
Ingredients:
potatoes
flour
minced onion
Directions:
1. Boil potatoes ande mash or run through ricer.
2. Measure potatoes and add an equal amount of flour to hot potatoes.
3. Add minced onion.
4. Work mixture with hands until well blended, yes its hot!
5. Form into golf ball sized balls.
6. Gently drop balls into salted boiling water.
7. Boil covered 10 minutes, uncovered an additional 5 to 10 minutes.
8. Check a dumpling to see if done by cutting in half. Should be firm and not doughy.
9. Serve hot with pan drippings from roast or with butter.
10. I prefer them the next day sliced and fried like potatoes and served with saurkraut and leftover roast.
