This is an old recipe my mom use to make. It is quite deceiving because it does not taste like potatoes. It is a good old fashion fry cake. It certainly doesn't fall into the healthy category. ; ) Just plain fun! Read more !
Ingredients:
3 eggs
3/4 cup sugar
3 tbl. butter, softened
2 3/4 c flour
4 tsp. baking powder
1 tsp. salt
1/4 tsp. ground nutmeg
1/4 tsp. cinnamon
1 cup mashed potatoes
vegetable oil for frying
Directions:
1. Prepare mashed potatoes.
2. Combine all ingredients except oil.
3. Chill dough for 2 hours.
4. Roll out dough to a half an inch thick. Cut into doughnut shapes.
5. Heat vegetable oil in a deep fryer or skillet until hot but not smoking.
6. Cook doughnuts in oil until brown, turn and cook the other side until brown.
7. May coat with a sprinkling of sugar and cinnamon.
