Ingredients:

Directions:

  1. Cut potatoes into bite size pieces and boil until cooked, drain.
  2. Heat oil, add onion....to curry, saute until onions are tender ~12mins
  3. Stir in remaining ingredients (add 1/4cup fresh cilantro at this time if wanted)
  4. Cover adn simmer until tomatoes have cooked down 7-10minutes
  5. Add potatoes and stir
  6. Serve with plain yogurt or add 1 cup, stir and cover and let stand 10min before serving
  7. Servie
