Potato Croquettes

Ingredients:
3 medium baking potatoes, peeled & sliced
1/4 cup shredded low-fat swiss cheese or 1/4 cup cheddar cheese (1 oz.)
1/4 cup fat-free cream cheese, product
1 tablespoon chopped fresh chives
1 tablespoon fat-free margarine
1 1/2 teaspoons prepared mustard or 1 1/2 teaspoons dijon mustard
1/4 teaspoon hot sauce
1/8 teaspoon salt
1 egg white, lightly beaten
1 3/4 cups coarsely crushed corn flakes
vegetable oil cooking spray
Directions:
1. Cook potato in boiling water for 20 minutes, or until tender; drain.
2. Transfer to bowl.
3. Beat potato at medium speed until smooth.
4. Add cheese, and next 6 ingredients.
5. Beat well.
6. Divide mixture into 10 equal portions and shape into balls.
7. Dip in egg white and roll in cereal.
8. Place on a baking sheet coated with nonstick spray.
9. Bake at 400 degrees for 10 to 15 minutes or until crisp and golden.
