Found this recipe in one of my ladies magazines and tore it out. Unfortunately I don't remember which one. Posting for safe keeping.
Ingredients:
3/4 cup unsalted butter, room temp
1 teaspoon vanilla
1/4 teaspoon kosher salt
1/2 cup sugar
1 1/2 cups all-purpose flour
1/2 cup pecans, chopped
3/4 cup potato chip, crushed (2 c when whole)
1/2 cup sugar
Directions:
1. Heat oven to 350 degrees.
2. Line 2 baking sheets with parchment paper.
3. Using an electric mixer beat butter, vanilla, salt and sugar until light and fluffy, about 3 minutes.
4. On low, beat in flour until just incorportated.
5. Stir in pecans and crushed potato chips.
6. In small bowl, place sugar. Roll level teaspoons of dough into balls and roll them around in sugar to coat.
7. Place on prepared baking sheets, spacing them 2 apart. With flat bottomed cup or glass, press each ball in to 1/4 thick round.
8. Bake until lightly brown, 16-18 minutes.
9. Let cool for 5 minutes before transferring to wire racks to cool completely.
