A fantastic light cookie for any occasion. I make mine mostly around Christmas and send them to my neighbors and family in cute tins and plates. These cookies are very delicate and very delicious! Topped with powdered sugar, they are lightly sweet, and look very festive for the holidays.
Ingredients:
3 cups all-purpose flour
1 cup sugar
1 lb salted butter
2 teaspoons vanilla
1 1/2 cups medium chopped pecans
1 1/4 cups crushed lays potato chips
powdered sugar
Directions:
1. Cream the sugar and butter.
2. Add the rest of the ingredients.
3. Drop on the cookie sheet.
4. Bake at 350 degrees for 15 minutes.
5. Sprinkle with powdered sugar after they have cooled for about 15 minutes
6. Please note that the cookies are very delicate and you should wait until they are cooled completely to move them. Also, do not chop the pecans or crush the chips too small - the cookies will not rise if there is too much of the ingredients.
