Potato Cheese Soup

A steaming bowl of this soup and a salad and some crusty bread make for a tasty comfort food meal!
Ingredients:
3 medium potatoes (about 1 lb), peeled and quartered
1 small onion, finely chopped
1 c water
1tsp salt
3c milk
3 tbl butter melted
2 tbl all-purpose flour
2 tbl minced fresh parsley
1/8 tsp white pepper
1 cup (4 oz) shredded swiss cheese
Directions:
1. In a saucepan, bring potatoes, onions, water and salt to boil.
2. Reduce heat; cover and simmer until potatoes are tender.
3. Do not drain; mash slightly.
4. Stir in milk.
5. In a small bowl, blend butter, flour, parsley and pepper
6. Stir this into the potato mixture.
7. Cook and stir over medium heat until thickened and bubbly.
8. Remove from heat.
9. Add cheese and stir until almost melted
