Potato Cheese Soup

Ingredients:
2 large potatoes
2 tablespoons finely chopped celery
1 tablespoon finely chopped onion
1 tablespoon finely chopped or grated carrot
2 cups chicken broth
1 teaspoon salt
2 teaspoons white vinegar
2 tablespoons flour
1 1/2 cups nonfat milk
1 cup shredded cheddar cheese
Directions:
1. In a large saucepan combine the vegetables, chicken broth, salt and vinegar over medium heat.
2. Bring to a boil, then simmer 20 minutes.
3. Whisk together the flour and nonfat milk.
4. Add the flour and milk mixture to the vegetable and broth mixture and continue simmering 5 to 8 minutes.
5. Add the cheddar cheese, it is ready to serve when the cheese is melted and the potatoes are tender.
