POTATO CHEESE PUFFS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Baker Estate in Sachse Texas in 1987.
Ingredients:
2 egg yolks beaten
1-1/3 cup mashed potatoes
3 tablespoons hot milk
1/3 cup grated cheddar cheese
1/4 teaspoon salt
1/4 teaspoon paprika
1/4 teaspoon celery salt
1/2 teaspoon finely minced onion
1 teaspoon chopped green pepper
2 egg whites stiffly beaten
1-1/2 tablespoons butter melted
Directions:
1. Preheat oven to 350.
2. Combine egg yolks, potatoes, milk, cheese, salt, paprika, celery salt, onion and green pepper. Mix well then fold in beaten egg whites and drop by mounds on greased cookie sheet.
3. Brush melted butter than bake for 20 minutes and serve hot.
