My mother made these, and I continue to make them. Can make them from fresh mashed potatoes or left over mashed potatoes. Great comfort food. Delicious
Ingredients:
4 medium potatoes, cooked and mashed
1 small onion, grated
1/2 cup flour
1 egg, slightly beaten
salt to taste, 1-2 teaspoons
1 *teaspoon* black pepper
Directions:
1. In large bowl, mix all together
2. Heat small amount of oil on medium heat in a skillet (I use iron)
3. Drop by a heaping tablespoon into the hot oil (can make smaller)
4. With a spatula, mash down the pancake
5. Turn once after you cook for several minutes until lightly browned
6. Drain
7. Serve hot
8. Great topped with sour cream, and sprinkled with chives
