The range of breads in the United States is quite different than that found in the U.K. My husband first had potato bread while we were in the U.S. on vacation and was eager to create his own. This recipe produced a sweet, moist bread with a delicious flavor.
Ingredients:
3/4 cup potato water
1/4 cup margarine or butter
1 egg
1/2 cup mashed potatoes
2 t sugar
1 tsp salt
3 cups bread flour
2 1/2 tsp yeast
Directions:
1. Boil 1 to 2 peeled potatoes.
2. Save the water to use in the bread.
3. Mash the potatoes, without milk or butter, and let cool to lukewarm or room temperature.
4. Put the ingredients in the bread machine container according to your bread machines instructions.
5. This recipe produces a 2 pound loaf.
