Potato and Kale Soup

Ingredients:

Directions:

  1. Cook onion for 5-10 minutes.
  2. Add stock, potatoes, and garlic; bring to boil.
  3. Reduce to medium and cook 10-15 minutes till potatoes are tender.
  4. Transfer potatoes and garlic to another bowl and mash.
  5. Add back to liquid and simmer.
  6. Slowly add kale.
  7. Salt & pepper to taste.
